Delicious Recipes from Mississippi's Celebrated Cook, Deborah Hunter

Deborah Hunter, charming and celebrated cook and Mississippi Public Broadcasting host of Deep South Dining, shares delicious recipes from her upcoming cookbook to be in bookstores this spring, "My Delicious Mississippi Life." Deborah Hunter uses her joy in the kitchen to cook up delicious dishes and serve a side of laughter and joy to her loyal followers.

"Living My Delicious Mississippi Life on the Lighter Side"

As we all move forward into a new year filled with so many wonderful amazing opportunities and adventures, it is important in the midst of so much excitement that we take time to care for ourselves! And what's a better way to start a new year than with a healthy dose of love, laughter, exercise and of course eating lighter! My friends and family affectionately call me " Honey," and I'd love to share a few simple, delicious, quick and easy meals for my table to yours that will leave you feeling energized, happier and healthier!

{Honey's Heart Healthy Bowl}

Is there anything yummier than a hot bowl of old fashioned oatmeal to warm your heart? This delightful combination is a wonderful way to start the day! Remember to keep your heart happy !

  • 1-3/4 cups of water or milk (I like using almond milk for the extra flavor.)

  • Bring your water or milk to a boil using medium high to heat - add salt to taste

  • Add 1 cup of oats. Give it a nice stir and allow to cook for 5 to 6 minutes.

  • Remove your oatmeal from the heat. Place a lid over your pot and allow it to simmer for 2 to 3 minutes

  • Now comes the fun part - stir in a pad or two of butter (optional)

  • Add 2 tablespoons of your favorite Mississippi honey

  • Sprinkle golden raisins, cranberries, bananas and sesame seeds on top for that perfect topping

{Honey's Sweet Potato Coleslaw}

My sweet potato coleslaw is an amazing blend of sweet and savory delicious, fresh Mississippi sweet potatoes and cabbage, yummy granny smith apples and golden raisins tossed together for a terrific side or an over-the-top topping for your favorite burger. This coleslaw is perfect for your next family outing or that big tailgating party!

  • In a large bowl add all of the below ingredients, toss well, chill and serve!

  • 1 large cabbage finely chopped

  • 1 medium sweet potato peeled and finely chopped

  • 2 granny smith apple finely sliced

  • 1/2 cup golden raisins

  • 2 tablespoons sugar ( 1/4 cup honey)

  • 2 teaspoons salt

  • 2 teaspoons coarse pepper

  • 1 teaspoon fresh lemon juice

  • 1/4 cup plus 3 teaspoons tarter sauce ( yogurt for a healthier option)

{Warm Corn Salad}

My warm corn salad is perfect as a side or your main dish and just in time for that family gathering!

  • 2 cups of garden fresh corn or 2 - 16 ounce cans of corn completely drained of all liquids. I'm a Mississippi girl, so I like using fresh fruits and vegetables so don't forget to visit your local farmers market!

  • 1 medium onion finely chopped

  • 1 cup fresh or frozen okra, cut into pieces. Make sure the frozen okra is completely thawed before using

  • 1 cup of heirloom tomatoes thinly sliced

  • 1/4 cup green onions

  • 2 chicken breasts or thighs cut into pieces, seasoned well and pan seared. Try using Grapeseed oil or Coconut oil as a healthy option.

  • 5 oz of Ro-Tel

  • Add 2 teaspoons of finely chopped fresh herbs like chocolate mint

  • In a well seasoned, cast iron skillet without any oil, add your corn and allow it to sear just enough to toast it up a little

  • Now add in your onions and give it a quick stir. Allow your onions and corn to lightly brown. Then add in your okra - allow it to lightly warm, turn off the heat, place a lid over your dish and allow it to sit.

  • Meanwhile sear your chicken using basic seasonings like salt and pepper to taste

  • Once your chicken is done toss it and all of its dripping in a large bowl and add in your corn and okra mixture, your green onions and heirloom tomatoes

  • Add 1 can of Ro-Tel along with your favorite fresh herbs

  • Try using mint, basil, rosemary and squeeze a fresh lemon

  • Note - If you do not prefer chicken, this salad pairs well with your favorite meat like juicy tender bites of steak, shrimp or it can be the perfect vegetarian dish!
